Alexis' Award Winning Peanut Butter Pie

Here's the recipe that earned Alexis a first place ribbon in the dessert contest on Pioneer Day at church.

Ingredients:

2 9 inch graham cracker crusts
1 8 ounce cream cheese softened
1 1/2 cups powdered sugar
1 cup peanut butter
1 cup milk
16 ounces french vanilla cool whip


Directions

  1. Beat together cream cheese and confectioners' sugar. Mix in peanut butter and milk. Beat until smooth. Fold in whipped topping.
  2. Spoon into two 9 inch graham cracker pie shells; cover, and freeze until firm. (I would give it 4-6 hours, at least.)

Garlic Mashed Potatoes

8-10 Potatoes peeled and boiled.  Mash the potatoes adding in 1/2 - 1 whole package of cream cheese.  I start with half and see if it is enough to make it creamy and 1/4  - 1/2 cup butter...add in salt and garlic powder to taste. It can be served as is or if you want it to be extra yummy you can put it in a casserolle dish adding a few pats of butter around the top pressing down a little bit into the potatoes and then put in the oven at around 350 degrees for up to 45mins...very tasty!  I usually serve this with the oven fried chicken.

Oven Fried Chicken

OVEN FRIED CHICKEN 
8 boneless skinless thighs
2 tbs paprika
2 cups flour
2 tsp salt
1/4 tsp garlic powder
1/4 cup butter or marg.

Combine all ingredients except chicken and butter. Put butter in 9x13 inch oven baking dish and melt.Coat chicken with dry mixture and place in pan with melted butter.
Cook at 425°F for 20 min. Remove from oven and turn chicken over.
Cook for an additional 20 min at 425°F.

How to Make Perfect M and M Cookies!


Ingredients
         1 stick/1/2 cup unsalted butter, softened*
         1/2 cup granulated sugar
         1/2 cup packed light brown sugar
         1 large egg
         1/2 teaspoon pure vanilla extract
         1 1/2 cups all purpose Gold Medal Flour*
         3 tablespoons Instant vanilla pudding mix
         1/2 teaspoon baking soda
         1/2 teaspoon kosher salt*
         3/4 cup mini chocolate chips
         1-1 1/2 cups Mini M and M’s
Directions
.    Preheat oven to 350 degrees F. and line a large baking sheet with a silpat liner or parchment paper.
.    In a large mixing bowl cream your butter and sugars until well combined. Add your egg and vanilla mixing to combine. Add your flour, pudding mix, baking soda and salt, stirring to combine. Add chips and m and m’s stirring to combine.
.    With a medium cookie scoop, place dough 1 inch apart from each other. Bake for 10-12 minutes until cooked through. Let cool on cookie sheet for 10 minutes before transferring to cooling rack. Enjoy!
Makes 2 dozen cookies

* you can use regular flour and regular butter or margarine and regular salt is also fine

Wonderful website


I love the website saymmm.com it is a wonderful way to prepare your menu add recipes and be able to quickly make your list of menu items for the week and your grocery list.  Once you have inputed all your recipes and their required ingredients all you need to to is add them to your "plan" and then compile the grocery list and all the ingredients are automatically added to your shopping list for you!  You can also manually type in any extra items you need....it's AMAZING!!!  I've been using it for years and love it. :)

Chicken Quesadillas

2-3 boneless skinless chicken breasts, cut up into 1 inch cubes
onion, diced
green pepper, diced
cayenne pepper, to taste
salt, to taste


flour tortillas
sour cream
cheese
tomato
green onions

Basically, I brown/cook the chicken with the cayenne pepper and salt until it is cooked through and add in the onion and green pepper and allow those to cook stirring frequently.  I use shortening to coat one side of the tortillas (i use the smaller size one's) then I put them in a pan add the chicken filling and cheese and fold the tortilla into a half moon shape allowing the bottom to brown slightly and melting the cheese flip it over and do the same on that side.  I even prop up the tortilla to get the back of it browned as well.  Add your favorite toppings (IE; shredded lettuce, sour cream, chopped green onions, tomato, etc) and ENJOY!


Crock Pot Ranch Chicken

Crock Pot Ranch Chicken
Ingredients:
6 boneless skinless chicken breasts (I usually use less)
1 can condensed cream of chicken soup
1 envelope ranch dressing mix
½ cup water
½ cup sour cream
2 tbsp ranch dressing
2 tbsp flour
Spray crock pot with non-stick cooking spray. Place chicken breasts in crock pot. In a small bowl, combine soup, ranch dressing mix, and water; pour over chicken. Cover and cook on low 8 hours or high 4 hours. Remove chicken from crock pot. Stir in sour cream, ranch dressing, and flour; replace chicken. Cover and cook on high 20 mins.

This is really good with mashed potatoes since the sauce can be used as a sort of gravy!  So easy and very tasty! :)

Beef Burritos

1 lb. ground beef
1 tsp. salt
1 tsp. black pepper
1 yellow onion, chopped
1/2 bell pepper, finely chopped
12 oz. can refried beans
3 C. shredded cheddar cheese, divided into 2 cups and 1 cup
1 dz. burrito size flour tortillas

8 oz. sour cream
8 oz. salsa
2 C. shredded lettuce
1 large diced tomato

In a large skillet brown the ground beef with salt and pepper. When ground beef is crumbling, add the chopped onion and bell pepper. Cook for an additional 3 minutes, and add the refried beans to the skillet. Mix the beans and meat together and let cook for 2 minutes. Add 2 cups of shredded cheese to the bean and meat mixture. Fill each tortilla with 1/2 cup of the mixture and add cheese to each. Garnish with remaining cheese, lettuce, tomatoes and sour cream.

Texas Chocolate Sheet Cake

Texas Chocolate Sheet Cake

2 c. sugar
2 1/2 c. flour
1/3 c. cocoa
1 tsp. soda
1 tsp. salt

Sift the above together. Add 2 eggs, 1 c. oil, and 1 c. buttermilk and mix well. Add 1 tsp. vanilla and 1 c. of boiling water. Mix and pour in greased and floured jelly roll pan. Bake at 350 for 20 minutes.

Frosting:
1/4 c. margarine
1/4 c. cocoa.
1 1/2 c. powdered sugar
3 T. milk
1/2 tsp. vanilla. Mix and pour over cake three minutes after taking cake from oven.
I usually substitute one cup of milk soured with either vinegar or lemon juice for the cup of buttermilk since I buy buttermilk only when I am making three or four cakes at a time.

Butternut Squash or Pumpkin Bread

3 c. white sugar
1/2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 tsp. cloves
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. ginger (opt.)
1 c. oil
1 c. water
3 1/2 c. flour
2 c. pumpkin or 2 c. butternut squash, cooked & cooled
4 eggs or cholesterol free Egg Beaters



Combine dry ingredients. Add water, oil and pumpkin or squash. Pour 1/2 full into 3 greased and floured 9"x5" loaf pans.
Bake at 325 degrees for 1 hour and 15 minutes or when toothpick inserted in middle comes out clean.

To can butternut squash. Peel and cut butternut squash into 1" pieces. Cook over medium heat with 1/2 cup water until soft. Strain and mash. Freeze in bags or use.

Cake- made to taste like Store cake

Make a boxed cake mix taste like a bakery.
Step 1: Look at the directions on the cake mix
Step 2: Add one more egg (or add 2 if you want it to be very rich)
Step 3: Use melted butter instead of oil and double the amount
Step 4: Instead of water, use milk.
Step 5: Mix well and bake for the time recommended on the box.


Can also add Vanilla Extract

Mashed Potato Puffs

makes between 12 and 24 puffs, depending the size of the pan used- I use regular sized individual silicone muffin tins

2 cups mashed potatoes
3 eggs, beaten
3/4 cup grated Parmesan or Gruyere, divided
1/4 cup minced chives (optional)
1/4 cup diced ham (optional)
Salt and freshly ground pepper


Heat the oven to 400°F and lightly grease the cups of a regular muffin tin, or a mini-muffin tin. Whisk together the mashed potatoes, the eggs, 1/2 cup of cheese, the chives, and ham. Taste and season, if necessary, with salt and pepper. Put a spoonful of the mixture in each muffin cup. Sprinkle the top of each potato puff with grated cheese. Bake for 20 minutes, or until the potato cups are set, browned on top, and hot through and through. Serve immediately.

3 Ingredient Peanut butter bars

1 cup honey
1 cup peanut butter
3 cups oats (I have used quick oats, not sure how it would differ with regular)
chocolate chips( optional and of course delicious)


Directions: Mix together the honey and peanut butter in saucepan until it turns liquidy. Once this happens pour in the oats and stir until mixed. Put into a 9x9 pan- or bigger if you want it to be thinner- The last time I used a 11x13 and it was a good thickness I think. Sprinkle the chocolate chips on top and let sit over night. It is pretty sticky, so every once in a while I put it in the freezer to harden up a bit.

Banana Bread- or muffins

1/2 cup melted butter
1 cup white sugar
2 eggs
1 teaspoon Vanilla extract
1 and 1/2 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
1/2 cup chopped walnuts (optional)
2 medium banana smashed


Directions Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan. In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan. Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

Vanilla Pancakes



1 1/2 cups flour
3 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup vanilla yogurt - regular or fat free
3/4 cup water
3 eggs
3 tablespoons butter (optional)
Cut up strawberries for top of pancakes (optional)
Directions


Mix together all of the dry ingredients in one bowel.
In separate bowel mix together the wet ingredients.
Mix together until combined, but don't overmix or the battery will be too thin and runny.
Use a 1/4 cup measuring cup to pour the batter evenly onto your griddle.
Cook the pancakes on griddle at around 350 degrees, cook each side until golden brown, around 1-2 minutes each side. Serve with cut up fresh strawberries if desired.
