How to Make Perfect M and M Cookies!


Ingredients
         1 stick/1/2 cup unsalted butter, softened*
         1/2 cup granulated sugar
         1/2 cup packed light brown sugar
         1 large egg
         1/2 teaspoon pure vanilla extract
         1 1/2 cups all purpose Gold Medal Flour*
         3 tablespoons Instant vanilla pudding mix
         1/2 teaspoon baking soda
         1/2 teaspoon kosher salt*
         3/4 cup mini chocolate chips
         1-1 1/2 cups Mini M and M’s
Directions
.    Preheat oven to 350 degrees F. and line a large baking sheet with a silpat liner or parchment paper.
.    In a large mixing bowl cream your butter and sugars until well combined. Add your egg and vanilla mixing to combine. Add your flour, pudding mix, baking soda and salt, stirring to combine. Add chips and m and m’s stirring to combine.
.    With a medium cookie scoop, place dough 1 inch apart from each other. Bake for 10-12 minutes until cooked through. Let cool on cookie sheet for 10 minutes before transferring to cooling rack. Enjoy!
Makes 2 dozen cookies

* you can use regular flour and regular butter or margarine and regular salt is also fine

Texas Chocolate Sheet Cake

Texas Chocolate Sheet Cake

2 c. sugar
2 1/2 c. flour
1/3 c. cocoa
1 tsp. soda
1 tsp. salt

Sift the above together. Add 2 eggs, 1 c. oil, and 1 c. buttermilk and mix well. Add 1 tsp. vanilla and 1 c. of boiling water. Mix and pour in greased and floured jelly roll pan. Bake at 350 for 20 minutes.

Frosting:
1/4 c. margarine
1/4 c. cocoa.
1 1/2 c. powdered sugar
3 T. milk
1/2 tsp. vanilla. Mix and pour over cake three minutes after taking cake from oven.
I usually substitute one cup of milk soured with either vinegar or lemon juice for the cup of buttermilk since I buy buttermilk only when I am making three or four cakes at a time.

Jello Salad

1 small pkg jello
1 can crushed pineapple
1 tub of cool whip
1 16oz tub of small curd 2% milk fat cottage cheese

in large bowl mix jello powder and cottage cheese...this takes a little bit of time you want to really make sure it's mixed together...kinda makes a grainy sound when you first start and it's done when you can't hear the graininess anymore. then drain the pineapple and add to the bowl, then add the cool whip and mix well...let set up in refridgerator for about 2 hours or until it's more firm.
