Alexis' Award Winning Peanut Butter Pie

Here's the recipe that earned Alexis a first place ribbon in the dessert contest on Pioneer Day at church.

Ingredients:

2 9 inch graham cracker crusts
1 8 ounce cream cheese softened
1 1/2 cups powdered sugar
1 cup peanut butter
1 cup milk
16 ounces french vanilla cool whip


Directions

  1. Beat together cream cheese and confectioners' sugar. Mix in peanut butter and milk. Beat until smooth. Fold in whipped topping.
  2. Spoon into two 9 inch graham cracker pie shells; cover, and freeze until firm. (I would give it 4-6 hours, at least.)

Garlic Mashed Potatoes

8-10 Potatoes peeled and boiled.  Mash the potatoes adding in 1/2 - 1 whole package of cream cheese.  I start with half and see if it is enough to make it creamy and 1/4  - 1/2 cup butter...add in salt and garlic powder to taste. It can be served as is or if you want it to be extra yummy you can put it in a casserolle dish adding a few pats of butter around the top pressing down a little bit into the potatoes and then put in the oven at around 350 degrees for up to 45mins...very tasty!  I usually serve this with the oven fried chicken.

Oven Fried Chicken

OVEN FRIED CHICKEN 
8 boneless skinless thighs
2 tbs paprika
2 cups flour
2 tsp salt
1/4 tsp garlic powder
1/4 cup butter or marg.

Combine all ingredients except chicken and butter. Put butter in 9x13 inch oven baking dish and melt.Coat chicken with dry mixture and place in pan with melted butter.
Cook at 425°F for 20 min. Remove from oven and turn chicken over.
Cook for an additional 20 min at 425°F.

How to Make Perfect M and M Cookies!


Ingredients
         1 stick/1/2 cup unsalted butter, softened*
         1/2 cup granulated sugar
         1/2 cup packed light brown sugar
         1 large egg
         1/2 teaspoon pure vanilla extract
         1 1/2 cups all purpose Gold Medal Flour*
         3 tablespoons Instant vanilla pudding mix
         1/2 teaspoon baking soda
         1/2 teaspoon kosher salt*
         3/4 cup mini chocolate chips
         1-1 1/2 cups Mini M and M’s
Directions
.    Preheat oven to 350 degrees F. and line a large baking sheet with a silpat liner or parchment paper.
.    In a large mixing bowl cream your butter and sugars until well combined. Add your egg and vanilla mixing to combine. Add your flour, pudding mix, baking soda and salt, stirring to combine. Add chips and m and m’s stirring to combine.
.    With a medium cookie scoop, place dough 1 inch apart from each other. Bake for 10-12 minutes until cooked through. Let cool on cookie sheet for 10 minutes before transferring to cooling rack. Enjoy!
Makes 2 dozen cookies

* you can use regular flour and regular butter or margarine and regular salt is also fine

Wonderful website


I love the website saymmm.com it is a wonderful way to prepare your menu add recipes and be able to quickly make your list of menu items for the week and your grocery list.  Once you have inputed all your recipes and their required ingredients all you need to to is add them to your "plan" and then compile the grocery list and all the ingredients are automatically added to your shopping list for you!  You can also manually type in any extra items you need....it's AMAZING!!!  I've been using it for years and love it. :)

Chicken Quesadillas

2-3 boneless skinless chicken breasts, cut up into 1 inch cubes
onion, diced
green pepper, diced
cayenne pepper, to taste
salt, to taste


flour tortillas
sour cream
cheese
tomato
green onions

Basically, I brown/cook the chicken with the cayenne pepper and salt until it is cooked through and add in the onion and green pepper and allow those to cook stirring frequently.  I use shortening to coat one side of the tortillas (i use the smaller size one's) then I put them in a pan add the chicken filling and cheese and fold the tortilla into a half moon shape allowing the bottom to brown slightly and melting the cheese flip it over and do the same on that side.  I even prop up the tortilla to get the back of it browned as well.  Add your favorite toppings (IE; shredded lettuce, sour cream, chopped green onions, tomato, etc) and ENJOY!


Crock Pot Ranch Chicken

Crock Pot Ranch Chicken
Ingredients:
6 boneless skinless chicken breasts (I usually use less)
1 can condensed cream of chicken soup
1 envelope ranch dressing mix
½ cup water
½ cup sour cream
2 tbsp ranch dressing
2 tbsp flour
Spray crock pot with non-stick cooking spray. Place chicken breasts in crock pot. In a small bowl, combine soup, ranch dressing mix, and water; pour over chicken. Cover and cook on low 8 hours or high 4 hours. Remove chicken from crock pot. Stir in sour cream, ranch dressing, and flour; replace chicken. Cover and cook on high 20 mins.

This is really good with mashed potatoes since the sauce can be used as a sort of gravy!  So easy and very tasty! :)
