Ingredients:
- 2 large sweet potato, peeled and diced
- 2 large onion, diced
- 8 cloves garlic, roughly chopped
- 4 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 8 cups vegetable stock
- 2 15-ounce cans black beans, rinsed and drained
- 1 28 ounce ounce can crushed tomatoes
- 1 cup dried quinoa - rinsed
- 1 bag frozen corn
Directions:
Add all ingredients into large pot and simmer for about 45 minutes-1 hour.
